It’s easily soluble in water, but insoluble in ethanol. The relative density is 1.63 and melting point is 34.6℃. If heated to 180℃, it may lose crystal water, convert to anhydrous. 6、Usage: In food industry, it is used as agent for baking to avoid oxidation stain and as emulsifier in dairy product to prevent egg white from solidification.
