  Xanthan gum is one kind of
  biologic synthetical gum whose
  appearance is near to white and
  light-yellow powder. As high
  macromolecule multi-sugar
  polymer, it is made from corn
  starch, by means of microorgan
  Xanthomonas Campestris's
  zymolysis Under special
  circumstance, abbtraction,
  drying, and milling. Its
  molecular constructiondecide its
  special effects: increasing
  thickness, suspending, tolerant
  to salt & high temperature & acid
  & alkali, resistant to shearing.
  Xanthan gum is widely applied in
  the food,medicine, pesticide,
  drilling, daily washing, textile
  printing and dying, tobacco,
  paper making, fire fighting, and
  other industries.
