Meat product
In the meat product processing process, adding phosphate can improve the pH value of the meat; metal ion chelating meat; increasing the ionic strength of the dissociation of actomyosin meat.
Phosphate also has a wide application in improving muscle protein water retention and gel strength. Phosphate on meat protein (extracted from the meat protein) has a significant impact on water retention.
Grain and oil products
Improving effect of phosphate on noodle is mainly manifested in: increase the gluten strength, reduce the starch residues; enhance the noodles viscoelasticity; improve the dough surface finish.
