It is a kind of natural edible pigment extracted from rubiaceous plant gardenia fruit. The main compositions are crocin and cricetin of series of carotinoid pigment. The powder from light gray to smalt is soluble in water and solution of water and alcohol, but insoluble in organic solvent. The environment PH value has little influence on its hue and stability. it can be used in the coloring of wine, carbonic acid drinks, juice drink, jam, jelly, candy, cakes, ice-cream, pastry, and puffed food.

Characteristics
1. Gardenia blue is a kind of dark blue fine powder, it can be easily dissolve in water, ethanol solution and propylene glycol solution, can not dissolve in organic solvent.
2. The shade is stable in medium when PH is between 4 to 8.
3. It has a good resistance to temperature, but not to light.
4. The dyeability is good to protein than starch.
Applications and Usage Instruction
Widely used in instant rice & flour products, jam, fruit-flavoured beverages, beverages of fruit and vegetable juice(pulp), candy, topping, imitation wine.
Usage Reference
The maximun usage limit for instant rice & flour products is 0.5g/kg, for jam and cabdy is 0.3g/kg, and for other products is 0.2g/kg
Storage & Shelf Life
Powder is two years from production date if sealed, avoid light, store in a cool & dry place. Once opened, should seal up again and use within 6 months.
