    Cas No. :5949-29-1 Citric acid is classified as weak acid and organic compound. It contains carboxylic bond and has a sour taste. Large amount of citric acid contains in fruit and vegetables, such as lemon and limes. It is soluble in ethanol at low temperature (approximately 15oC). The physical property of citric acids is a white crystalline powder when stored at room temperature. Citric acid occurs in the form of anhydrous, which crystallized from hot water, or monohydrate that crystallized from cold water. The anhydrous form of citric acid can be produced by heating citric acid monohydrate.
