It is extracted and refined from the dried bodies of female cochineal; the main ingredient is carminic acid. The product is a dark red liquid or powder, soluble in alkali, slightly soluble in hot water. It is widely used as a colorant in jelly drinks, sugar, candy, canned food, sausage, western ham and other products.
