    Introduction: D-Xylose or wood sugar is an aldopentose obtained from plants rich in hemicelluloses, such as sawdust, rice straw and corn cobs. It can be dissolved in hot ethanol and pyridine easily. Its sweetness is 67% of sucrose. Xylose has similar chemical properties to glucose, and it can be reduced to corresponding alcohol, i.e. xylitol, or oxidized into 3-hydroxy glutarate.
    Applications:
    1). Xylose is mainly used to produce xylitol by hydrogenation, which is used more widely.
    2). Xylose can be used as sweet agent free of calorie in food and drinks, which are suitable for patients of obesity and diabetic.
    3). Xylose has already been applied inside the pet feed in the developed countries.
    4). Xylose is used for baking.
    5). Xylose is used for the color of top grade sauce.
    6). Xylose is also used in light industry and chemical industry.
