  Purple red powder, water and acetic soluble but not in oil.Produces purple-red to red shade at less than pH 6 and purple-red shade to unstable at greater than PH 7.Excellent stability to heat and light, especially in acid condition.Applicable to wine, beverage, juice, jam, ice-cream, pastry and so on.
