  Pepsin is the main protease of vertebrate gastric juice. It is extracted from healthy porcine gastric mucosa and made after drying and porphyrizing.

  Properties: it is white or light yellow amorphous powder with a special meat and slightly sour smell. It is soluble in water, hygroscopic. The aqueous solution shows acidity.
